The Secret Story Behind a Margarita

The origins of the most stereotypical Mexican cocktail is a mystery: Most people dream about something really fancy or even adventurous behind its making, but the reality of it’s background might come from a more down to earth point of view. The first story I heard regarding was one about Carlos “Danny” Herrera, back in 1938, in the middle of Tijuana and Rosarito, at his restaurant Rancho La Gloria. According to this story, the Margarita was fabricated to solve a problem: customer and dancer, Marjorie King was allergic to many liquors but not to Tequila, therefore as the liked to drink it but the taste was too strong to take it straight, he took the stereotypical ingredients of a shot and whipped it into a Margarita.

But this isn’t the only claim to the title “Margarita Creator”: A Dallas socialité named Margarita Sames claimed that she made the drink with her friends while in Acapulco in 1948, and her friend Tommy Hilton, owner of a hotel chains, placed the drink at the bars of the Hilton Hotels. But Jose Cuervo tequila brand also claimed the title for himself by the fact that he had already started to use a marketing campaign with the slogan “Margarita: It’s more than a girl’s name” since 1945. In Ensenada, Mexico, a bartender named Carlos Orozco claimed he named the drink in honor to Margarita Henkel, the daughter of a German ambassador that wanted to taste the concoction he was fabricating back in 1941. Danny Negrete also said that he was the sole inventor: The drink was a wedding gift for Margarita, his sister-in-law.

Even a non-Mexican origin is named: The latinization of the drink “Daisy” that was popular during Prohibition. There are only a few slightly differences: The American is made with Brandy and the Mexican with Tequila. The modern mixture is made with Tequila, triple sec or Cointreau, and lime, in a salt rimmed glass, and the different variations go from frozen, with orange, to adding a bit of sugar on the bottom and so on. Regardless of how you do it, the result is always the same: A bar staple and a perfect drink.

Tequila: Behind The Most Representative Mexican Drink


When you think of Mexican drinks the first thing that pops right into your mind is tequila. It’s originated in the Tequila Municipality of Mexico, Jalisco; produced from the distillation and fermentation of agave pineapples, and along with the mezcal, one of the most representative mexican alcoholic drinks. Its taste resides in its purity: To be labeled ‘tequila’ it must be made of at least 60% of agave juice, with the rest of the components being sugars such as corn syrup or sugar cane. The current tradition of drinking it with salt and lime comes from the need to popularize the drink in other markets and to reduce the strength of its flavour to foreign palates.

Etiquette on the table: The basics!
When we decide to go out and eat at a fancy restaurant or at a formal event, there’s always this tiny bit of fear we feel about proper protocol: What are all this silverware items for? Where do I place my utensils after I finish? When do I start eating? While all this might cross your mind at that particular situation, let be honest: Those are not every day occurrences, so I will give you a heads-up of the basic rules. Now, shall we begin?
The first thing to remember in terms of manners is that they apply even before eating and there are some things which are tagged as a huge “NO, CAN’T DO!”. One of those is the habit of placing the elbows on the table; it’s something as frowned upon as eating with you mouth open, or pinching several items of food at the same time. The idea is to remain sat down with our back straight and no more than five inches away from the table, placing our forearms slightly on the table. Another common doubt is when to start eating: The best is to do it when your hosts start or most of the table is served. This applies to formal and informal situations, as it doesn’t look good to be over-eager while having dinner or lunch.
The next step it’s a little trickier: How do we use the silverware? Most of the times, you hold the knife and spoon with the right hand, this is due to the use of the force of that hand to cut and the spoon to pick up liquid or creamy food. You rarely use the fork on the right hand, and this happens only if you don’t have another piece of silverware on the left hand. The water and drinks are served to you from the right side, and they are placed there beforehand; in more informal situations the bottle or jug is left for you to serve yourself. The setting is only changed if the placing of the items don’t interfere with the other guests. Now, as far as food placing goes , the services normally happen in three possible styles: french, english and russian. Those are defined by the setting, but the most common one is the french service style where the food is placed in front of you and you serve it on the plate yourself. Next in occurrence is the english one, when the food is served by a waiter from an auxiliary cart, and the next is the russian, where your plates are made right in front of your eyes.

These are the basic manners you need to manage at a table. Now that you know them, you can act the part when eating out at a fancy restaurant. Using Traditional Tools to Create Ethnic Dishes

What Do You Know About Table Service?

There are some details of service that we take for granted, and actually forget about them until someone points them out directly. Have you ever thought about how the bussers set the table and the server place the food there? It’s not by chance, it’s a conscious choice that the owners make when they are deciding how their restaurant is going to work. As far as silverware setting and plate placing, there are several  options, but service is the most important key that your clients are looking for. Food can be great but if service is not most likely your clients are not to come back.

Serving the table

The most important thing here is to train your staff: They are going to be the look of your restaurant, even more than the establishment itself. Your servers and bus person are the ones that make sure that every table is set, and every client is attended. This is also important to remember as there’s  several ways to do this phase of your service, there’s different ways to serve plates, and I’ll explain some of those.

American Service: Clients are offered a menu and they pick what they are interested in, with the entrees served to them already plated, directly from the kitchen. Buffet Service: It’s a self service option where  plates are stacked  and people choose from their options and then sit  at a their respective tables. This service is used for salads or desserts, but it’s not limited to since it’s also used in more informal settings.
