The Story of a Dish:  Tex Mex Fajitas

The fajitas are as simple as a stir fry meat and vegetables eat wrapped in a flour or corn tortilla.
The origin of the Mexican fajitas dates back to the late 1930s period when many Mexicans work on farms in the area of Texas, USA and as part of their wages they received cuts of skirt steak, called “falda or faja” in spanish, hence the name "Fajita" since it was cut into small pieces and eat with tortillas.

The fajitas dish that comes from the creativity of these workers and their good culinary use, were becoming one of the most traditional dishes in the Tex-Mex cuisine. Fusion of two cultures, southern Texas and northern Mexico.

At first Fajitas were only cooked beef but today is made with chicken and other ingredients such as shrimp, today day we cannot conceived them without some salsa and sour cream, guacamole, pico de gallo, cheese, diced tomatoes, rice and beans

And now that you know the story you just need to come to RG Cocina Mexicana this Cinco de Mayo to experience a Real Fiesta and taste our delish Fajitas! We hope to see then…
